The restaurants we recently visited got me thinking about sustainability. In Alberta May’s restaurant in Stanley, they maintain a high quality restaurant with nearly all ‘from scratch’ menu items which must be a challenge in this economy and in a rural area. Serving the needs of the assisted care home facility provides a successful solution as it provides a base for their business. The Main Street Cafe had a similar approach, selling their pies to Quikmart provides a good income. In some ways they are multi-use restaurants, serving a business and then also opening their doors to the community and travelers. I wonder if this approach can be adapted by other local businesses. In some ways the research center I work with takes this approach. About half of our work is accomplished through a partnership with NOAA and the rest of our work through grants from other agencies.
